I think that the one thing we need to do to improve the food system is to connect midsize farmers to the massive market that exists through wholesale channels. And that’s by investing in food hubs around the country, that allow them to aggregate this produce and be sold to communities around the cities and other places, like GrowNYC has recently done with green market Co Our Food Hub, which has been pretty successful to help those midsize farmers or the ones that are disappearing the fastest across the nation reach those markets, expand their farms and stay in business.
