One of the biggest problems with the food system today doesn’t start with food – it starts with time, or the lack of time. And I think the lack of time relates to consumers, people, and the lack of time they have to make the right choices and do the right thing that they would want to do given more time. It also applies to chefs, and the lack of time that chefs have to make choices and do the right thing. And ultimately, when those two worlds collide as well as other people who are facing a lack of time, it creates big problems in the food system.
