My vision for the future of food and the food system is one that is connected to life, because food is life, and when we are disconnected from food, and every aspect of the food system, starting with the water, and the land, the animals, the people who produce it, the purveyors who bring it to market, the chefs who cook it, the culinary directors and food service directors to cook it, and ultimately then again the guests or the general public – when we’re disconnected from the original source of life, and how all of those elements work together in one system, then we’re disconnected as people. And I think that the current state of the food system is depriving us of our humanity as people, and it’s depriving every element of that system of life.
